Crock-Pot Chicken Tortilla Soup

I accidentally made chicken tortilla soup, and it was delicious.

I already knew how to make this yummy soup, but I intended to make shredded chicken in the Crock-Pot for chicken tacos. Half way through, I realized that I had done so with about all the same ingredients that you would need to make chicken tortilla soup, minus a few minor ingredients.

Once I realized this, I got two meals out of one! Now that is splendid! As much as I love cooking, it can be too much to cook a homemade meal everyday. Now I understand why people go crazy for the Crock-Pot freezer meal pins on Pinterest! There really is something to be said for meal prepping. I’m all about preventing stress and overwhelm as much as possible and this helped me make about 4 nights worth of dinners in one night. Call me a Crock-Potin’ mealpreppin’ believer. YAY!

The ingredients below are what I used to start the soup, I mean shredded chicken :)

10 Organic Chicken Thighs
3 Tablespoons of minced garlic
½ of a White Onion
I can Organic Diced Tomatoes
2 cans of Chicken Broth
2 Tablespoons of hot sauce
A handful of chopped Cilantro
2 Tablespoons of spices which included:
cumin, paprika, chili flakes, salt, pepper and onion powder.

I placed the chicken on the bottom of the Crock-Pot then put all the dry ingredients on top, then finished with the wet ingredients on top of that put the top on and turned the dial to low for 6-8 hours. I let mine go the full 8 hours. At 6 hours, I added in black beans to officially make it chicken tortilla soup. I would have added in corn, but I didn’t have any on hand.

Here is what it looked liked before I added in the black beans. Then, when it was done cooking I took out what chicken I wanted to reserve for tacos, drained it, then put the broth back in the Crock-Pot.

Then serve and eat! I topped it off with some tortilla chips crushed up, extra sharp white cheddar, regular cheddar, cilantro, sour cream and a lime wedge. It was so good, the hubby wanted seconds...okay, I did too!

  7. so perfect for one of those 'what should i do with this leftover chicken' days. overnight cooking would make the house smell so good the next morning when my hunger is roaring!
