GF Pistachio Pudding White Chocolate Cookies

Want the prettiest green cookies for dessert tonight for St. Patrick's Day? These are so easy to whip up and they are a fun way to get festive for this Irish holiday.

I’ve always loved pistachio anything but I have never had a pistachio cookie, macaroon yes, just not a cookie. So I wanted to bake something different for St. Patty’s day and C is a cookie eater, so I decided to surprise him.

These were actually really fast to make. I really have to be in the mood to bake and this recipe was surprisingly quick and you know I’m all about simplicity.

The pudding mix added to these cookies packs a whole lot of flavor and color. And there is just something about pistachios that remind me of a carefree childhood, maybe it’s’ the fun color that usually accompanies the sweet and nutty flavor? Who doesn’t love a soft mint green anything?

I love the way that the cookies are still sweet, but have a crunch from the chopped pistachio’s. I don’t usually care for nuts in my sweets, so I am so happy that my favorite nut worked out.

I’m convinced no one will be able to resist these soft and chewy cookies, they are just that good! I had to send nearly all of them with C to his office so I wouldn’t over indulge. Once you make these, you’ll know why!

1⅔ cups all purpose GF flour
1 box instant pistachio pudding mix
1 tsp baking soda
½ tsp salt
Green food coloring, optional
¼ cup light brown sugar
½  cup  sugar
¾ cup unsalted butter, softened
2 tsp organic vanilla extract
2 eggs, room temperature
1 1/2 cup white chocolate chips
½ cup chopped pistachios

Mix together sugars, butter, egg and vanilla until well blended
Stir in dry ingredients, chocolate chips and pistachios, mix well
A few drops of green food coloring if you're desiring a brighter green cookie. I added three small drops and quickly mix in. I suggest waiting until you have all the ingredients well mixed so the coloring doesn't get absorbed by the dy ingredients only.
Preheat oven to 325F (make sure you watch the cookies the first time you make them, my oven is a tad tempermental)
Lightly grease cookie sheets with canola oil
Scoop out rounded tablespoons of cookie dough and place on prepared cookie sheet.
Bake for 13 minutes, anything over and they might not come out as chewy and soft.
Let cookies cool and then enjoy!
