Vanilla Rice Crispy Squares with Lemon White Chocolate Drizzle



I'm feeling the St. Patrick Day vibes and decided to share a quick dessert idea for the fun green filled day. I’m not trying to brag, but these Vanilla Rice Crispy Squares with Lemon White Chocolate Drizzle are pretty darn delicious!


This recipe is a spin on an oldie but goodie. I had melted white chocolate left over from a Galentine’s Day party I hosted last month and couldn’t bring myself to throw out perfectly delicious chocolate. So naturally using it for a sweet treat was a win. I also wanted to keep things on the simple side for this St. Patty’s treat and melting more chocolate wasn’t something that I wanted to do. So yay! And let’s be real, Rice Crispy Squares are super simple, so double yay!


I love the idea of adding in something unexpected to make a simple recipe something that wows your tastebuds or makes you think, “Hmm, I don’t think I’ve ever tried that." And in this case, I’ve never tasted lemon on any Rice Crispy Square.


So to make these Rice Crispy Squares a little bit more sophisticated, I grabbed that melted white chocolate I had on hand, added some lemon extract and a couple drops of green food coloring and mixed up the chocolate. I added in a bit of canola oil to thin out the chocolate, then I drizzled it all over the crispy treats with a fork.


Two words. Sooo yummy.


I love the unexpected zing with the creaminess of the white chocolate and the sweet crunch from the Rice Crispy. You really HAVE to try this recipe out next time you make Rice Crispy Squares or if you need to bring something to a gathering, your tastebuds and friends will thank you.




Ingredients
I  10oz bag of Marshmallows
6 cups of Rice Crispies
⅓ cup of Butter
2 Tablespoons of Organic Vanilla Extract
⅓ Cup of White Chocolate Chips
Canola Oil (to thin out chocolate) little as needed
Green food coloring
3 Tablespoons of Lemon Extract or fresh squeezed lemon juice


Instructions
Melt butter and Marshmallows together, stirring slowly on low heat.
Once melted, remove from heat, add vanilla extract and stir in.
Add Rice Crispies and mix together.
Spread out on cookie sheet, set aside and let cool.
Melt Chocolate, in microwave safe bowl or on stovetop until smooth. Keep a close eye on the chocolate.
Add in just a bit of canola oil to get the chocolate smooth, if needed.
Add in Lemon extract, and food coloring, mix until smooth and food coloring is even.
Take a fork and a dollop of white chocolate, and gently shake fork across the cookie sheet of Rice Crispies.
Let sit and cut into squares
Enjoy!
